Healthy beef stroganoff, with the turkey swap and the yogurt trick
Ground beef stroganoff comes to about 788 calories a serving by our estimate. Turkey mince and Greek yogurt take it to 592, and the fat from 40 g to 17.

Ingredients
- 500 g ground beef (beef mince), 80/20
- 400 g mushrooms, sliced
- 160 g onion, finely chopped
- 4 garlic cloves, crushed
- 24 g plain flour, all-purpose flour in the US
- 480 ml beef stock or broth
- 2 tsp Dijon mustard
- 2 tsp Worcestershire sauce Out of Worcestershire sauce?
- 240 g sour cream Out of sour cream?
- 300 g egg noodles, dried
- 12 g fresh parsley, chopped, to finish
Method
- Put a large pan of salted water on to boil for the noodles.
- Heat a wide frying pan over a high heat with no oil. Add the beef in two batches, pressing each one flat and leaving it alone for 2 minutes before breaking it up, until it is properly brown. Lift it out with a slotted spoon and leave the fat behind. Turkey browns the same way in a non-stick pan.
- Turn the heat to medium and cook the mushrooms and onion in the fat left in the pan for 8 to 10 minutes. The mushrooms release water first and only brown once it has gone, so wait for it.
- Add the garlic for 30 seconds, then sprinkle over the flour and stir for a minute.
- Pour in the stock a little at a time, stirring, then add the mustard and Worcestershire sauce. Simmer for 3 to 4 minutes, until it is thick enough to coat a spoon, and stir the beef back in.
- Cook the noodles as the packet says and drain them.
- Take the frying pan off the heat and let it stop bubbling. Stir a few spoonfuls of the hot sauce into the sour cream to warm it, then stir the lot into the pan. Do not let it boil again. This matters twice as much with Greek yogurt, which splits if it boils.
- Taste for salt and pepper and serve over the noodles, with the parsley.
Stroganoff made with ground beef and sour cream comes to about 788 calories a serving by our estimate, with 40 g of fat. Two swaps, turkey for the beef and Greek yogurt for the sour cream, take it to about 592 calories and 17 g of fat. The sauce stays creamy as long as the yogurt goes in off the heat, which is the one step this version cannot skip.
Can beef stroganoff be healthy?
Yes, and it takes less than people think, because the calories sit in three places. One serving is a quarter of the pan, over 75 g of dried noodles.
| Part of the plate | kcal | Fat |
|---|---|---|
| Ground beef, 80/20, 125 g | 304 | 24 g |
| Egg noodles, 75 g dried | 288 | 3 g |
| Sour cream, 60 g | 119 | 12 g |
| Mushrooms, onion, garlic, parsley | 43 | 0 g |
| Flour, stock, mustard, Worcestershire | 34 | 1 g |
| Per serving | 788 | 40 g |
The beef and the sour cream carry nine tenths of the fat. The noodles carry more than a third of the calories and almost none of it, which is why they get their own section below.
The two swaps, and what each is worth
| Swap | kcal | Protein | Fat | Running total |
|---|---|---|---|---|
| Ground beef to ground turkey, 93% lean | −113 | 0 g | −12 g | 675 kcal, 28 g fat |
| Sour cream to fat-free Greek yogurt | −83 | +5 g | −11 g | 592 kcal, 17 g fat |
The turkey adds no protein. Per 100 g raw, 93 percent lean turkey carries 17.3 g of protein against 17.5 g for 80/20 beef, by USDA figures. What it changes is the fat, which is why the app treats it as a fat swap and not a protein one, and why the turkey bolognese makes the same point.
The yogurt adds 5 g. At 60 g a serving there is enough of it for the protein to count, and it is the swap to make if you only make one.
The buttons above apply them: Less fat turns on both, More protein only the yogurt.
What can I use instead of noodles for beef stroganoff?
Per serving, at the amounts you would actually eat.
| Under the stroganoff | kcal | Protein | Carbs |
|---|---|---|---|
| Egg noodles, 75 g dried | 288 | 11 g | 53 g |
| White rice, 75 g dried | 274 | 5 g | 60 g |
| Chickpea pasta, 75 g dried | 255 | 15 g | 41 g |
| Cauliflower rice, 150 g | 38 | 3 g | 7 g |
Rice lands close to noodles on calories. Chickpea pasta is the protein pick. Cauliflower rice is the big number: with both swaps and cauliflower in place of the noodles, a serving comes to about 342 calories. That is a real difference, and it is also a much lighter dinner, so decide which one you are after.
Is beef stroganoff good for a calorie deficit?
It can be. The classic at about 788 calories is a lot for one plate. The swapped version comes to about 592 calories with 45 g of protein, which is a filling dinner that fits a deficit far more easily. What decides it is the portion of noodles more than anything in the sauce.
What goes wrong
A split sauce. Greek yogurt curdles if it boils, far more readily than sour cream, because it carries more protein and less fat to protect it. Sour cream is more forgiving, but it is still best kept below a boil. Take the pan off the heat, warm the dairy with a few spoonfuls of the sauce first, and never let it boil again. The flour already in the sauce helps too: thickening the sauce before the yogurt goes in is one of the ways Ricardo recommends to stabilise it.
Grey beef and wet mushrooms. Both come from a crowded pan. Mince browns in batches, and mushrooms only brown once their water has cooked off, so give them the full 8 to 10 minutes.
Dry, bland turkey. Use 93 percent lean, not the 99 percent kind, which has nothing to brown with. Brown it hard, and lean on the mustard and Worcestershire sauce, which do more for turkey than they do for beef.
Is ground turkey good in stroganoff?
Yes, if you brown it properly. It is milder than beef, so the sauce has to carry more of the flavour, which is what the mustard, Worcestershire sauce and well-browned mushrooms are for. It takes about 12 g of fat off a serving and adds no protein.
The secret to a flavourful stroganoff
Browning, twice: the meat, then the mushrooms. Most of the flavour in the pan comes from those two steps, and a stroganoff that skips them tastes of cream and not much else. Scrape up the browned bits when the stock goes in.
Storing and reheating
Leftovers keep 3 to 4 days in the fridge, the USDA guidance for leftovers. Reheat gently with a splash of stock and do not let it boil, or the sauce splits the second time around. Store the noodles separately if you can.
Every figure here is an estimate from typical ingredient values, mostly USDA FoodData Central, rather than a measurement. Why recipe macros are estimates explains how far they move with the brands you buy.

Worth cooking next:
- Turkey bolognese, and what the turkey actually saves youTurkey mince is a fat swap, not a protein one. A plate here is about 723 calories and 41 g of protein by our estimate, against 835 with standard beef mince.
- Ground turkey chili that does not taste like it is missing somethingTurkey chili at 25 g protein a bowl, without the dryness turkey usually brings. Why you brown it in two batches and what replaces the fat you lost.
- Healthy chicken enchiladas, swap by swapCreamy chicken enchiladas come to about 956 calories a serving by our estimate. Four swaps take them to 606 and add 18 g of protein. What each swap is worth.
